Ingredients
- 1.5–2 lb pulled or cubed wild hog (shoulder leftover is perfect)
- 1 onion, diced
- 2 garlic cloves, minced
- 2 Tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 (28 oz) can crushed tomato
- 2 cups stock or water
- 1 can pinto or kidney beans, drained (optional)
- Salt, black pepper, and cayenne
- Cornbread, onion, and cheddar to serve
Steps
- Brown hog and onion in a Dutch oven. Add garlic 30 seconds.
- Stir in chili powder, cumin, and paprika so they bloom in the fat.
- Add tomato and stock. Beans if you want them. Simmer 45–75 minutes.
- Season hard. The hog should taste like chili, not leftover barbecue.
- Rest 5 minutes. Serve with cornbread, onion, and cheddar.
