Ingredients
- 2 yellowtail snapper fillets (about 6 oz each), patted dry
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 2 Tbsp oil or bacon drippings
- 2 Tbsp butter
- 1 lemon, juiced (plus wedges)
- 1 garlic clove, smashed (optional)
- Chopped parsley or green onion
Steps
- Pat the fillets very dry. Season both sides with salt and pepper.
- Heat oil in a skillet over medium-high until it shimmers. Lay fillets skin-side down. Don’t move them for 3–4 minutes.
- Flip and cook 1–2 minutes more until the flesh is just opaque.
- Drop in butter, garlic, and lemon juice. Tilt the pan and spoon the butter over the fish.
- Rest 1 minute. Parsley on top. Serve with rice or a simple salad.
