Ingredients
- 2 squirrels, jointed (or 1.5 lb dark-meat chicken to practice)
- 1 onion, chopped
- 1 (28 oz) can crushed tomato
- 2 cups corn (fresh or frozen)
- 2 cups lima beans or butter beans
- 2 potatoes, diced (optional)
- 4 cups stock
- 1 bay leaf
- 1 Tbsp cider vinegar
- Salt, black pepper, and hot sauce
- Cornbread, to serve
Steps
- Brown the meat in a heavy pot. Add onion until it smells sweet.
- Pour in tomato, stock, and bay. Simmer until the meat pulls easy; shred it back in.
- Add corn, lima beans, and potato. Cook until the stew is thick.
- Finish with vinegar, salt, pepper, and hot sauce.
- Rest 10 minutes. Serve with cornbread.
